Alex started making our own almond milk regularly this year after California began irradiating most of its almonds. It tastes much better than what you can buy in the store as well as having more nutritious value. One ounce of almonds (about 20 -25 nuts) contain as much calcium as 1/4 cup of milk and also contains 12 percent of the daily allowance of protein, as well as 35 percent of your daily allowance of vitamin E, a valuable antioxidant with many cancer-fighting qualities.
The almond is also loaded with minerals like magnesium, phosphorus and zinc, as well as folic acid and lots of healthy fiber. Almond milk contains no cholesterol or lactose and has no detrimental effect on the thyroid as does soy milk. Some have experienced a calming effect and drink the nut milk it in the evenings to help with sleep. The minerals may be the reason for this.
Walnuts, which are also in the recipe, are a high source of essential unsaturated fatty acids such as alpha-linoleic acid. Their content in proteins and vitamins is high, especially in vitamins of the B group and E, and in the minerals potassium and magnesium. Walnut also contains the amino acids arginine, leucine and glutamic acid, as well as taurine. Taurine is especially important because it is involved in homeostatic regulation, thermoregulation, nervous conduction and protection against oxidative stress.

Almond Milk Recipe
1 cup pre-soaked almonds
¼ cup walnuts
3 tablespoons maple syrup
1 teaspoon vanilla extract
1 tablespoon lecithin granules (optional)
1 quart water and ice.
For best results we recommend using a Vitamix processor to blend all the ingredients. Refrigerate and enjoy.
